White Bean & Kale Soup



What you need: 2 boxes vegetable broth 2 tbsp olive oil 5 cloves of garlic 1 1/2 cups of carrots chopped 1 cup celery chopped 1 cup chopped onions 1 cup butternut squash cubed 1/2 cup slivered almonds 2 bay leaves 3-4 cans White Northern Beans 1 cup kale (chopped up real good) 2 sprigs fresh rosemary Sea salt Pepper 1 tsp ground red pepper


Sauté garlic, carrots, onions, and celery in the olive oil on bottom of pot. This helps them to get softer first before adding everything else. Once they start getting soft, add everything else in. Add seasonings to taste (lessen red pepper amt if you don’t like a little kick) and then let everything simmer for a bit and serve!!
